Zucchini Bread

I love this simple zucchini bread - it's sweet and delicious, and freezes well.

3 egg
2 cups sugar
2 teaspoons vanilla
1 cup canola oil
2 cups zucchini, shredded unpeeled
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon ground cinnamon


Preheat oven to 350. Lightly grease two 9x5" loaf pans;set aside.

In a bowl, beat eggs with electric beater until frothy. Beat in sugar,
oil, and vanila until thick and foamy. Stir in grated, UNPEELED
zucchini. In another bowl, stir together the flour, baking soda,
salt, baking powder, and cinnamon. Add to zucchini mixture and stir
just until all is moistened. Stir into prepared pans.

Bake for 50-60 minutes.
