Yorkie Beef Pudding

We call this the "big popover" - it's basically a huge popover with a beef and mushroom filling. Try it, and it will become a family treasure!

1 onion, small chopped
3 tablespoons butter
3/4 pound ground chuck
1 4 oz. can button mushrooms
1 10 oz. can canned beef gravy
1/2 cup water
1/4 teaspoon salt
1/8 teaspoon pepper
2 egg
1 cup milk
1 cup flour, sifted
1/2 teaspoon salt


Saute onion in 1T butter in small skillet. Add meat, cook until brown. Drain grease from pan.

Add mushrooms. Combine gravy and water in 2 cup
measure. Stir 1/4 c of gravy mixture into meat. Blend well, add 1/4 teas salt and 1/8 teas pepper. Save rest of gravy. Turn off heat under hamburger pan.

Place quiche dish or large pie plate in oven as it preheats to 425. Melt 2T butter in quiche dish or pie plate for the last few minutes while it heats.

Beat eggs in medium sizebowl, add milk. Beat well. Add flour, 1/2 teas salt, beat until smooth.Pour into quiche dish. Spread meat mixture evenly over batter to within 1"of the edge.

Bake 30 minutes. Serve with warmed beef gravy.
