Thai Rice Soup (Kao Tom)

Kao Tom is a traditional Thai breakfast soup, although it's great any time.  It's made with pork, rice and cilantro. You can use shredded or diced chicken also. It has quickly become one of our favorite breakfasts!

7 cups water
1 pound ground pork
2 pork bouillon cubes, available in Asian markets
4 cups cooked rice, preferably from the day before and refrigerated
2 green onions, thinly sliced, including green part
1/2 cup fresh cilantro, chopped
vinegar to taste
fish sauce (nam pla) to taste
dried chili pepper, to taste


Bring water to a boil. Add pork seasoning and ground pork. Use wooden spoon to chop up pork in water. Boil about 5 minutes, then add rice. Bring to a boil, then reduce heat and cook about 5-7 minutes, so rice sweels. Add cilantro and green onions, stir, then remove from heat and serve with vinegar, fish sauce (nam pla, or salt if you don't have any) and dried crushed red pepper on the side for guests to add to taste.

Additional Tips

Thai fish sauce (nam pla) and Maggi pork bouillon cubes are available in most Asian markets, or on the web from thaigrocer.com
