Sweet and Spicy Short Ribs

I love short ribs of beef, and this is my favorite way to prepare them. They are tasty and almost melt away in your mouth. They require some preparation time, but it's worth it.

4 pounds short ribs, beef
1 cup catsup
1 cup water
1 tablespoon vinegar
1 tablespoon Worcestershire sauce
1 tablespoon prepared horseradish
1 tablespoon sugar
1 tablespoon dry mustard
3/4 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
2 onion, medium sliced


Combine ribs with remaining ingredients EXCEPT ONIONS, in large saucepan; cover. Simmer 2 hours or until tender. Cool, then chill until 1-1/4 hoursbefore serving. (overnight is best).

Skim off all fat and remove any loose bones from ribs; remove bay leaf. Place meat in a 2-qt casserole dish, pour sauce over top with onionslices, cover.Bake in 350 degree oven 30 minutes. Uncover, baste onions with sauce indish. Bake 30 minutes longer, or until meat is very tender.
