1 pound sea scallops
1 teaspoon olive oil
1 teaspoon butter
1/2 cup fresh mushrooms, sliced thin
1/4 cup green onion, minced
1 clove garlic, minced
1/2 teaspoon white pepper
1/2 cup dry sherry
2 tablespoons heavy cream (optional)
1/4 cup fresh parsley, choppedsalt to taste

Methods/steps

Heat oil and butter together in heavy skillet. Saute mushrooms, green onions, garlic and pepper together until mushrooms start to get tender. Add scallops and sherry and cook over very high heat until sherry is reduced by half. Do not overcook scallops! Toss with cream and parsley and serve immediately.
