Description

I came up with this recipe one day while trying to decide what to do with some extra zucchini. The shallots and garlic turn plain zucchini into a treat.

1 small onion, halved and sliced
2 shallot, sliced thin
2 tablespoons olive oil
2 cloves garlic, minced
2 zucchini, sliced thin
1/8 cup chicken stock, or water
salt and pepper, to taste

Methods/steps

Saute onion and shallots in olive oil in a skillet until caramelized, stirring occasionally, about 5-6 minutes. Add garlic and cook for 1 minute. Add chicken stock (or water)and zucchini and saute, covered, stirring occasionally, until tender. (the water helps steam the zucchini)
