Sauteed Chicken with Oregano and Tomato

My wife came up with this one day while trying to use some leftover chicken breasts. It's delicious and easy to prepare.

3 skinless boneless chicken breast halves, cut in 2" cubes
1 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt
2 tablespoons olive oil
1 onion, chopped
1 can diced tomatoes
1 can chicken broth
1/2 tablespoon dried oregano
1/2 tablespoon parsley
1/2 tablespoon dried thyme
3 olives, jumbo
1/4 cup white wine
2 bay leaves


Rub pepper and salt on chicken pieces, let marinate for 1 hour. Heat olive oil in skillet, saute chicken until brown on both sides but not quite done. Add everything else and simmer, stirring occasionally, until onion is soft and flavors are blended, about 10 minutes. Serve.
