7 ounces roasted red peppers (1 jar)
1 clove garlic 1/2 onion, chopped 1 tablespoon olive oil 1 tablespoon balsamic vinegar parsley 1/2 teaspoon Old Bay Seafood seasoning or cajun seasoning 1/2 teaspoon dried basil 1/4 teaspoon cayenne pepper 2-3 tablespoons heavy cream 1 teaspoon butter 1/2 cup zucchini Methods/stepsProcess red peppers with their juice along with garlic in a food processor. Add oil to a medium-sized saucepan and saute onions and zucchini for a few minutes. Add spices. Add vinegar and cook 1 minute until the liquid is absorbed. Add pepper puree and stir. Add 1 teaspoon butter and stir until butter is melted. Add heavy cream and stir, until it is heated through but don't let it boil. Good with pork, fish or chicken. Reviews |
