Description

This is a Christmas favorite in our house. These jelly-filled holiday pecan cookies are addictive, and you can use any flavor(s) of jelly you like.

36 small cookies

1 cup flour, sifted
1/8 teaspoon salt
1/2 cup butter
3 tablespoons confectioners (powdered)sugar
1 cup pecans, chopped
1 teaspoon vanilla
1/2 cup assorted jams or jellies

Methods/steps

Sift flour and salt on wax paper. Cream butter
with confectioners sugar until well blended in medium bowl. Stir in dry ingredients half at a time, blend well. Stir in pecans and vanilla. Chill until firm - several hours or overnight.

Several hours later, heat oven to 300. Roll dough, one teaspoonful at a time, into marble size balls in palms of hand Place 2" apart on ungreased cookie sheet.

Make a hollow in center of each with thumb. Fill with 1/2 teaspoon of jelly.

Bake at 300 for 20 min., or until delicately golden. Remove from cookie sheet and cool on wire rack.
