Raspberry Sauce for Ice Cream

The ultimate raspberry sauce for ice cream. Add a few fresh raspberries on top and you've got a quick, tangy raspberry delight!

1 cup
2 cups raspberries, pureed, and optionally sieved to remove seeds
1/4 cup sugar
2 teaspoons arrowroot, or cornstarch
2 tablespoons fresh lemon juice
1/4 cup water
2 tablespoons brandy, or cognac
1 tablespoon dark rum


Combine everything EXCEPT alcohol in heavy saucepan. Simmer, stirring, over low heat, until thickened, about 3 minutes. Stir in the cognac and dark rum and serve at once, very hot.

Additional Tips

Goes well over vanilla ice cream. You can use fresh or frozen raspberries equally well.
