Pork Adobo

Adobo is the national dish of the Philippines. I fell in love with this while on military duty there. This is tangy and wonderful - try it!

2 pounds pork shoulder, in 1" cubes, fat OK
3/4 cup vinegar
1/2 cup soy sauce
1 teaspoon salt
1 onion, sliced
3 cloves garlic
1 bay leaf
1/4 teaspoon pepper
1 tablespoon sugar
3/4 cup water
2 tablespoons canola oil


Combine all ingredients except oil in a pot and let marinade for 1 hour.
Once it has finished marinating, simmer covered for 1 hour in a heavy saucepan or until meat is tender. Drain and reserve sauce.

Heat cooling oil in skillet, and brown meat on all sides. Transfer to the pot you used to simmer it, and add sauce back in. Simmer an additional 10 minutes.

Serve with steamed rice.
