Sometimes the simplest recipes are the best, a lesson the Italians learned years ago. This easy pork tenderloin lets the taste of the pork shine, with just the right touch of seasoning.

3 pounds boneless pork tenderloin (two 1.5 lb loins)
2 cloves garlic
2 tablespoons seasoned pepper
2 tablespoons oregano

Methods/steps

The night before, in small bowl, mix the garlic, seasoned pepper, and oregano. Place a sheet of wax paper on a flat surface and sprinkle with seasoning mixture. Roll the tenderloins in the seasoning, wrap in plastic wrap, and REFRIGERATE OVERNIGHT.

Preheat oven to 350. Place tenderloins in a baking pan. Roast in oven for 30 minutes. Remove from oven and let stand for 5 minutes.

To serve, slice each tenderloin crosswise into 1/2 inch slices.
