Mexican Torte

A wonderful Mexican-style casserole made with beef, cheese, and sour cream. My Mom has been making this for 30 years and it's still one of our favorites.

3/4 cup onion, coarsely chopped
2 cloves garlic, minced
3 tablespoons olive oil
1 pound ground round burger
2 cups canned tomatoes, diced, about 1 can
1 cup beef stock, or water
3 tablespoons chili powder
1 teaspoon cumin
9 tortillas, fresh
1 cup Monterey Jack cheese, grated
1/2 cup sour cream
1/2 cup onion, finely chopped
6 black greek olives, pitted and halved


Cook the coarsely chopped onion and garlic in the olive oil for 5 minutes, but do not brown. Add the meat and cook, stirring, until it loses it's red color.

Add the tomatoes, water (or stock), chili powder, cumin, and salt and pepper to taste. Do not cover, and simmer 45 minutes.

Preheat oven to 350 degrees.

Spoon a little of the sauce over the bottom of a buttered casserole and cover it with three tortillas, overlapping them if necessary.

Sprinkle with 1/3 of the cheese, 1/3 of the finely chopped onion,1/3 of sauce and a tablespoon of sour cream. Continue adding layers, with 3 tortillas between each, until all ingredients used up. End with a top layer of sauce. Spoon remaining sour cream into the center of the torte and garnish around it with the black olives.

Bake casserole for 30 minutes, or until it bubbles. Serve piping hot.
