Description

Chilled gazpacho is a Spanish soup made with fresh vegetables and served over fresh fruit. It's the perfect light summertime soup, and a classic of Spanish cuisine.

8 tomato, peeled
1 cucumber, chopped
2 green bell pepper, chopped
3 cloves garlic, minced
1 red onion, chopped
1/2 slice white bread
3 tablespoons lemon juice
1/3 cup olive oil
1/2 teaspoon chives
1/2 teaspoon basil
1 cup chicken stock
1/4 cup cream
cucumber, chopped
melon, diced
seedless green grapes

Methods/steps

Puree tomatoes in blender with cucumber, green pepper, garlic, onion, bread (no crust), lime juice, oil, herbs and seasonings. Add chicken broth, blend well.

Freeze in containers if you are preparing ahead.

To serve, defrost for several hours or overnight in refridgerator. Add cream, blend until smooth in blender or with beater.

Put diced cucumbers, melon, grapes in bowls, pour soup over top.
Serve well chilled.
