Fish with Spicy Orange Ginger Sauce

An intriguing and exotic sauce for most any fish, and very simple to prepare.

12 ounces fish fillets, Tilapia or other, 6 oz per person
4 tablespoons butter
1 tablespoon fresh ginger, chopped
1 medium jalapeno pepper, seeded and diced
1 tablespoon fresh cilantro, chopped
1/4 cup orange juice


Season fish fillets with your favorite seasoning.

Heat 2 tablesppons of butter in a frying pan. Add seasoned fish and pan fry for 2-3 minutes per side until golden brown and fully cooked. Gently remove from pan and set aside, keeping warm.

Add remaining 2 tablespoons butter to the fry pan. Saute ginger and jalapeno pepper for 1-2 minutes until tender. Add cilantro and orange juice, bring to a boil and remove from heat. Season to taste with salt and pepper and serve immediately over fish.
