6 tablespoons butter, for frying
4 catfish fillets, about 4 oz each 3/4 cup cornmeal 1/4 cup all-purpose flour 1/2 teaspoon salt 1/2 cup milk 2 eggs, beaten 2 tablespoons Old Bay Seafood seasoning Methods/stepsRinse catfish fillets and pat dry. Mix cornmeal, flour, salt and Old Bay seasoning in large bowl, then spread on wax paper. In another bowl, mix milk and eggs until well blended. Dip fish in egg mixture, then coat fish with cornmeal batter. Fry fish 5 to 8 minutes or until golden brown in frying pan with butter at 350 degrees (or in a heavy skillet over medium-high heat) Drain on paper towels and serve. Reviews |
