3 pounds beef chuck
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup flour
1/4 cup oil
2 cups apple juice
1 cup celery, sliced
1 envelope onion soup mix
3 cups apples, sliced
parsley

Methods/steps

Cut beef into 2" cubes. Dredge in a mixture of the flour, salt and pepper. In a heavy pot, brown the beef in oil over medium-high heat.

Stir in apple juice, celery, and soup mix. Cover, simmer 1 hour, stirring occasionally.

Add sliced apples, and continue cooking, covered, 5-7 minutes.

Transfer beef and apples to a serving platter, garnish w/ parsley. Spoon off fat from pan juices; serve juices w/ beef and apples.

Additional Tips

Serve with white rice to soak up the delicious gravy.
