1 pie crust, chocolate wafer
6 ounces cream cheese, softened
1 can sweetened condensed milk, 14 oz
1 egg
3 tablespoons lemon juice
1 teaspoon vanilla extract
1 1/4 cups raspberries

Chocolate Glaze:

2 ounces semisweet chocolate square
1/4 cup whipping cream

Methods/steps

Preheat oven to 350. Soften cream cheese in microwave 15-20 seconds. With mixer, beat cream cheese until fluffy; gradually beat in condensed milk until smooth. Add egg, lemon juice, and vanilla; mix well.

Arrange raspberries on bottom of pie crust. Slowly pour cheese mixture over fruit. Bake 30-35 minutes or until center is set. Cool.

In small saucepan, over low heat, melt 2 1-ounce squares of semi-sweet baking chocolate with 1/4 cup whipping cream. Cook and stir until thickened and smooth. Remove from heat.

Top cheesecake with chocolate glaze; chill well before serving.
