Chive Muffins

These muffins are the perfect savory accompaniment to almost any meat dish. The taste is unlike any muffins you've ever had - and quite addictive!

1 egg
1 cup milk
1/4 cup oil
2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/4 cup chives, snipped


Heat oven to 400. Grease bottoms of 12 muffin cups or use paper liners.

Beat the egg in a medium-sized bowl. Stir in the milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy - do not over beat!

Fill muffin cups 2/3 full. Bake at 400 degrees for 20-25 minutes or until golden brown. Immediately remove muffins from pans.

This recipe freezes well - perfect when you need something to add to a meal.
