Chilled Strawberry Soup

This cool summertime soup is refreshing and fruity. A must for strawberry lovers!

3 pints fresh strawberry
1/2 cup sugar
2 cups red Burgundy
1/4 cup flour
2 cups orange juice
1 cup water
3 cups sour cream
1 cup light cream, or milk


Wash, hull, and quarter the strawberries. Cook them in one cup water for 10 minutes.

Combine sugar and flour in a separate saucepan. Stir in the wine and orange juice. Stir or whisk constantly until mixture boils. (approx 10
minutes) Add to the strawberries. Cool.

Puree the soup in a blender and add 3 cups sour cream and one cup milk or light cream.

Chill well. Serve garnished with sliced strawberry if desired.
