This is not your typical chili. It tastes quite different from other chili recipes, with the emphasis on the meat flavor.

1 pound ground chuck
1 onion, large minced
1 clove garlic, minced
3 tablespoons butter
1 8 oz. can tomato sauce
1 6 oz. can tomato paste
1/2 teaspoon celery salt
1/2 teaspoon caraway seeds
1/2 teaspoon red hot pepper flakes, crushed
1 bay leaf, crumbled
1 tablespoon chili powder
1 tablespoon basil, dried
1/2 teaspoon salt
1 16 oz. can chili beans


Saute beef, onion, and garlic slowly in butter.

Add tomato sauce, tomato paste, and seasonings. Continue simmering over low heat about 10 minutes.

Add beans, cover and let simmer one hour or longer. If additional liquid is needed, add beef bouillon so that the mixture has the consistency of soup.

This dish freezes well, making it perfect for a quick meal when you need one.
