Chicken with Lime Butter

4 boneless skinless chicken breast halves
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup canola oil
fresh lime juice, 1 lime
8 tablespoons butter
1/2 teaspoon chives, minced
1/2 teaspoon dill weed


Sprinkle chicken on both sides with salt and pepper. In a large frypan, heat oil to medium temperature. Add chicken and saute about 4 minutes or until lightly browned. Turn chicken, cover, and reduce heat to low. Cook 10 minutes or until form can be inserted into chicken with ease. Remove chicken and keep warm.

Drain oil from the frypan and discard. Add lime juice and cook over low heat until juice begins to bubble. Add butter and stir until butter becomes opaque and forms a thickened sauce. Stir in chives and dill.

Serve with sauce spooned over chicken.
