Chicken with Dried Tomato Cream Sauce

Dried tomatoes are the secret to this flavorful sauce.

1/2 cup dried tomatoes
4 chicken breast
3 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon pepper
1 shallots, large minced
2/3 cup cream
1/2 cup white wine
1/4 teaspoon marjoram


If dried tomato used, and not packed in oil, soak in 1 cup boiling
water for 2-3 minutes to reconstitute.

Cut tomatoes in narrow strips. Wash chicken in several changes of water and pat them dry.

Cut chicken diagonally in 3"x 3/4" slices. Melt butter inskillet. Add chicken, salt and pepper. Saute on moderate heat until chicken is opaque, 4-5 minutes. Do not overcook.

Remove chicken and put on a platter.

Add shallot to skillet, saute 1 minute. Add tomatoes, cream, wine, and marjoram. Bring to boil, simmer 5 minutes or until sauce thickens.

Return chicken to skillet, heat through. Serve over egg noodles or rice.
