Chicken Kiev, Country-Style

Quick & easy, and tastes terrific. Despite the name, it's not Russian - it's a rural French favorite. One of my 5 favorite chicken dishes.

1/2 cup butter
1/2 cup bread crumbs
2 tablespoons parmesan cheese, grated
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon garlic salt
1/4 teaspoon salt
2 skinless boneless chicken breast
1/4 cup white wine
1/4 cup green onions, chopped
1/4 cup parsley, chopped


Heat oven to 375.

Melt butter in a 2 quart saucepan on the stove. Remove from heat as soon as its melted.

Combine bread crumbs, cheese, and spices except parsley on wax paper. Dip chicken in butter, roll in crumbs. Save the butter, throw away the remaining breadcrumb mixture..

Place chicken skin side up in an ungreased 9" baking dish. Bake in center of oven at 375 for 30 minutes.

Meanwhile, add wine, onion, and parsley to remaining butter. When chicken is brown, pour butter mixture on chicken. Cook 2-3 additional minutes or until sauce is hot.

Serve w/ sauce spooned over.

Additional Tips

Great served with parmesan-style noodles.
