DescriptionChicken, crab and shrimp with an elegant Cajun hollandaise. What's not to like?! This is my version of a dish served at the Crown Restaurant in Clermont, Florida.

Cajun Hollandaise sauce:
1/2 cup sour cream 1/3 cup mayonnaise 2 teaspoons dijon mustard 1 teaspoon lemon juice 2 teaspoons cajun seasoning, or to taste pinch cayenne pepper ------ 2 tablespoons butter 2 skinless boneless chicken breast 4 jumbo shrimp, shells removed 1/4 cup sherry 1/2 cup crab meat Methods/stepsPrepare hollandaise: Combine all ingredients and heat gently, stirring, until heated through. Saute chicken in a little butter until almost done. Add sherry, crabmeat and shrimp - saute a couple more minutes. Arrange chicken on plate, top with crabmeat, then sauce, then shrimp. Reviews |
