An Italian favorite. I fell in love with this dish after eating it at Joe Tecci's Restaurant in Boston.

2 pounds broiler-fryer chicken
2 tablespoons flour
2 tablespoons oil
1 10 oz. can tomato soup
3/4 cup dry red wine
1 onion, sliced
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon salt
2 cloves garlic, minced
1 bay leaf
1 green bell pepper, sliced
1 cup mushroom, sliced

Methods/steps

Coat chicken with flour. Brown chicken in oil in a large fry pan. Add remaining ingredients, except pepper and mushroom. Stir well, cover, simmer for 30 minutes.

Add green pepper and mushrooms, cook 15 minutes more. Remove bay leaf, and serve with spaghetti or fettucine.
