Chicken Breasts with Red Wine & Sage Sauce

This is quick and tasty. Sage and chicken were made to go together - and the red wine creates a tantalizing sauce.

4 tablespoons butter
2 chicken breast halves, boneless
4 fresh sage, leaves, or 1/4 teas dried
1/2 cup dry red wine
1/4 cup chicken stock
salt and pepper , to taste

Methods/steps

In a saute pan or heavy skillet over medium-high heat, melt butter; add chicken breasts and saute 2-3 minutes on each side or until just lightly browned.

Lower heat to medium and add sage. Sprinkle on the salt and pepper; stir in 1/4 cup of the red wine. Cook, covered, for 8 minutes; uncover the pan and cook for 2 minutes more, or until chicken breasts are tender. Remove to a heated platter and keep warm.

Add remaining 1/4 cup red wine and chicken stock to the pan. Turn up the heat and boil until reduced by half. Pour the sauce over the chicken.
