Chicken and Asparagus Casserole

One of my 5 favorite chicken recipes. If you like asparagus, this rich, creamy casserole will become one of your favorites also!

10 tablespoons butter
4 skinless boneless chicken breast, quartered
6 shallots, chopped
4 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 cup cream, light
1/2 cup white wine
1/2 cup parmesan cheese, grated
25 fresh asparagus spears


Heat oven to 375. Melt 6 tablespoons of butter in a skillet, and brown chicken on both sides. Remove and keep warm. Melt the remaining butter in a small saucepan, and saute shallots 1-2 minutes. Blend in the flour. Add salt and pepper and stir in the cream and wine. Bring just to the beginning of a boil, stirring. Stir in 1/2 of the cheese, until it melts. Remove from the heat.

Arrange asparagus spears in the bottom of a greased casserole pan. Place the chicken on top, and pour sauce over it. Sprinkle with the remaining cheese.

Bake 20-30 minutes or until hot and lightly browned on top.
