Chicken Adobo

Adobo is the national dish of the Philippines. I fell in love with this while on military duty there. This is tangy and wonderful - try it!

3 pounds chicken, cut into serving pieces
3/4 cup soy sauce
1 1/4 cups white vinegar
1 head garlic, peeled and crushed
2 bay leaves
1/2 tablespoon peppercorns
1/2 cup water


Combine everything in a pot, and simmer for 30 minutes. Remove chicken pieces from pot and broil them in a pan for 10 minutes to brown. Let the sauce in the pot boil to reduce by half. Add salt to taste but be careful - most American soy sauce contains a lot of salt already, and you may not need any.

Place chicken on a platter, cover with the sauce, and serve with steamed rice.
