This is one of my favorite carrot recipes. If you are tired of the same tastes, this might get you excited about carrots again!

4 cups carrots, shredded or coarsely grated
2 tablespoons butter
1 medium onion, minced
1/2 cup white wine
salt and pepper
1 tablespoon chopped parsley, optional

Methods/steps

Preheat oven to 350.

Melt butter in medium casserole. Stir in carrots and onions. Sprinkle lightly with salt and pepper, pour wine over. Cover, bake 30 minutes. Uncover for last 5 minutes.

Serve with chopped parsley on top.
