Broiled Marinated Bluefish

This simple but delicious recipe lets the flavor of the bluefish shine.

2 bluefish fillets
1 cup olive oil
2 cloves garlic, minced
1 onion, sliced
1 bay leaf
1 teaspoon salt
1/4 cup lemon juice
1 teaspoon pepper
dry white wine


Lay fillets in shallow dish and cover with mixture of remaining ingredients, using enough wine to cover the fish. Allow fish to marinate at least 12 hours. When ready to cook, preheat the broiler with the rack about 4 inches from the heat. Place the bluefish on a broiler-safe baking tray and broil for 5 minutes. Turn fish over, baste with the marinade and broil until the center of the fish is just firm when pressed gently, about 5-7 more minutes depending on thickness of the fish.
