Black Java Beef Stew

This hearty stew is made with beef and mushrooms, with a hint of coffee. It really perks up the flavor, no pun intended.

3 pounds beef chuck, cut in 1" cubes
1/4 cup canola oil
1 onion, sliced
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups dry red wine
3/4 cup black coffee, strong
3 cloves garlic, minced
3/4 teaspoon dried thyme
1/2 pound mushroom, sliced


In a heavy pan, brown meat;remove meat from pan. Cook onion in hot oil.

Combine flour, salt and pepper;toss with browned meat. Return to pan;cook and stir to brown flour.

Add wine, coffee, garlic and thyme. Cover and simmer 2 hours.

In a separate pan, saute mushrooms just before stew is done. Mix into stew just before serving.
