Beef with Guinness

This flavorful beef stew is made with Guinness (or other strong beer). It doesn't taste like beer - it just tastes terrific!

2 tablespoons oil
2 bay leaf
2 pounds beef chuck, 1" cubes
2 large onion, sliced
2 tablespoons flour
3/4 cup beer, Guinness preferred
1/4 cup water
1 cube beef bouillon
4 carrots, sliced
1/2 cup parsley, fresh
salt and pepper to taste


Heat oven to 300. Heat oil and bay leaf in heavy ovenproof pot on the stove over medium-high heat. Add meat and brown, turning occasionally. Add the onion and cook for a few more minutes until onion softens and starts to turn transparent.

Reduce heat to low. Add the flour, stirring well to distribute the flour evenly. Cook for 3 minutes, stirring.

Mix in the beer and bouillon, and bring the pot to a simmer. Add carrots, parsley, salt and pepper. Cover the pot, transfer to oven. Cook 2 hours at 300, stirring occasionally.

Additional Tips

This goes well with steamed white rice and steamed or roasted broccoli, or just by itself with some good crusty bread.
