I had never given barley much thought until I had this delicious side dish at Disney's Epcot Food & Wine Festival several years ago.

2 tablespoons butter
1/2 cup onion, chopped
1 cup barley
1/2 cup carrot, diced
3 cups chicken stock
1/4 cup celery, chopped

Methods/steps

In a heavy saucepan saute onion, carrots and celery in butter until soft. Stir in barley and cook for two minutes, stirring to coat rice with the butter. Add chicken stock and bring to a boil. Cover, turn heat low, and simmer 40 minutes. Fluff with fork and serve.
