2 tablespoons butter
1/2 cup onion, chopped 1 cup barley 1/2 cup carrot, diced 3 cups chicken stock 1/4 cup celery, chopped Methods/stepsIn a heavy saucepan saute onion, carrots and celery in butter until soft. Stir in barley and cook for two minutes, stirring to coat rice with the butter. Add chicken stock and bring to a boil. Cover, turn heat low, and simmer 40 minutes. Fluff with fork and serve.
