Serves
2
3/4 pound asparagus, tough ends trimmed
1/2 cup water
1 tablespoon butter
2 tablespoons sliced toasted almonds
1 teaspoon fresh lemon juice

Methods/steps

Cut the asparagus diagonally into 1-inch long pieces. Heat the water and butter in a skillet over medium-high heat until it just starts to boil. Reduce the heat to medium. Add the asparagus to the skillet and simmer it until it is tender but still slightly crispy, about 3-4 minutes. The sauce will be reduced to a glaze. Add the lemon juice, sliced almonds, and salt and pepper to taste. Serve immediately.

Additional Tips

Be sure to lightly toast the almonds first - it makes a big difference in their taste. Just bake them on a small baking sheet for about 10 minutes in the oven at 350 degrees, stirring once or twice while they toast. Remove them from the baking sheet promptly so they don't continue to cook while they sit.
