Amaretti Torte

This tasty torte is made with Italian Amaretti di Saronna cookies. You can find them at many gourmet shops and better grocery stores. They impart a wonderful flavor to this memorable dessert.

7 large Amaretti di Saronna cookies, crumbled (to make 1/2 cup crumbs)
1 cup butter, softened
1 cup sugar
5 egg yolks
1/2 cup flour, sifted
4 ounces chocolate chips
6 egg whites
6 tablespoons powdered sugar


Heat oven to 350. Coat 10x2" round cake pan with butter and dust the pan with flour.

Cream the butter with the sugar until fluffy and almost white. Beat in the egg yolks, one at a time. With mixer at lowest speed, add the Amaretti crumbs and the flour gradually. Fold in the chocolate.

Beat the egg whites in a separate bowl until stiff. Stir 1/4 of the egg whites into the batter to loosen it up some, then fold in the remaining egg whites. Spread into the prepared pan and bake until cake tests done, about 35-40 minutes.

Cool in pan on rack 30 min, then loosen edges of cake with dull knife. Turn onto rack to cool. Turn over to serve, dust generously withpowdered sugar.
